Turkish food is not what most visitors expect: it is fresh, seasonal, surprisingly light, and obsessively focused on quality ingredients.

Essential Street Food

Balık Ekmek — Fish Sandwich

Grilled mackerel in a white roll with onion, tomatoes, and lettuce, sold from rocking boats beneath Galata Bridge. One of the world's great street foods. Cost: about 80–100 TL.

Simit

The circular sesame-crusted bread ring — Istanbul's breakfast staple and street snack. Buy from the red trolleys on any corner. Eat with white cheese and tea.

Döner Kebap

Skip the tourist traps. Go to Karaköy or Beşiktaş for a proper döner — thin-sliced rotating lamb or beef with tomato, onion, and yogurt.

Kokorec

Not for the faint-hearted — seasoned lamb intestines on a rotating skewer, served chopped on bread with tomatoes and peppers. A beloved Istanbul street staple.

Wet Burger (Islak Hamburger)

Available only in Taksim — a small steamed beef patty in a soft bun, soaked in garlic-tomato sauce. Best at Kizilkayalar in Taksim Square at 2 AM.

Sit-Down Dishes You Must Try

Meze

A spread of small cold dishes — hummus, baba ganoush, dolma, white bean salad, fried mussels, liver, cheese. Order ten things and share.

Iskender Kebap

Thinly sliced döner over cubed bread, drenched in tomato sauce and brown butter, served with yogurt. Rich, warming, iconic.

Balik Restaurant in Kumkapı or Karaköy

Fresh fish, simply grilled, with raki. Order whatever was caught that day. Istanbul is on the sea — the fish is extraordinary.

Menemen

Scrambled eggs with tomato, pepper, onion, and olive oil — a Turkish breakfast staple. Try it at Van Kahvaltı Evi in Cihangir for the full treatment with 20 small dishes.

Best Neighbourhoods to Eat

  • Karaköy: Trendy, diverse — good for everything from pastry to raki bars.
  • Beyoğlu (Asmalımescit): Classic meyhane street, buzzing every night.
  • Kadıköy: Asian side food market — the most authentic neighbourhood eating in Istanbul. The market stalls, specialist shops, and breakfast spots here are unmatched.
  • Balat: Historic Jewish neighbourhood with excellent börek shops, breakfast cafes, and the most photogenic streets in the city.
  • Fatih / Sultanahmet: The old city. Simpler, less touristy food — good pide, çorba (soup), and traditional lokantas (workers' restaurants with buffet dishes).

Turkish Tea & Coffee Culture

Tea (çay) is not a beverage in Turkey — it is a social institution. Served in small tulip-shaped glasses, poured from a double samovar, it appears at every interaction. Turkish coffee is thick, unfiltered, served with a glass of water and a sweet. Accept every offer of tea you receive.
